The liver then transforms these intact fatty acids directly into energy, thus reducing its already considerable workload. Furthermore, because the liver directly converts MCTs into energy, eating coconut oil also results in less fat accumulation (stored energy from other sources) in and around the liver. One of the pancreas’ functions is to produce the enzymes needed to transform fatty acids into usable energy.
